Who says celebrating Earth Day should be limited to reducing, reusing, and recycling? This year, we’re showing Mother Earth our love with some of the freshest, mindfully composed garden-to-glass cocktails you’ll find in Chicago.
Equipped with an 80-seat rooftop patio that doubles as an expansive herb and vegetable garden, this sustainability-driven restaurant in West Town is home to handcrafted cocktails loaded with ingredients that are literally plucked from the soil on-site. The vividly colored Boston Pre-Party packs an aromatic punch with light rum infused with orange, lemon, cinnamon and clove, blackberry tea, floral lavender liqueur, and fresh mint garnish. 1924 W. Chicago Ave., 773-332-2354
This California cool newcomer offers an impressive selection of cocktails chockfull of fresh ingredients and garnishes. For something strong yet balanced, look no further than Barbarians at the Gate. The subtly fruity concoction includes tequila, plum sake, citric acid, and celery, and is served straight up with a fresh thyme garnish. 1749 N. Damen Ave., 773-697-3315
Bright, sunny, and wholly fitting for spring, Mott St’s Wright Flyer cocktail is one of several refreshing new drinks on the restaurant’s seasonal cocktail list. It features lemon and a sprig of mint grown in Mott St’s garden, Letherbeen gin hailing from Chicago, Chinaco Blanco tequila, Crème de Violette, and Benedictine, and pairs seamlessly with chef Edward Kim’s famous Everything Wings. 1401 N. Ashland Ave., 773-687-9977
Seasonal ingredients sourced from nearby farmers, foragers, and artisan craftsman guide the food and beverage menus at this Wicker Park gem. Egg white-based cocktail lovers will enjoy the supremely frothy and flavorful Caribbean Beets, which includes a blend of thirst-quenching ingredients such as lemon and lime juice, herbaceous tarragon simple syrup, fresh beet juice, allspice dram, Bacardi Superior rum, an egg white, and a sprig of fresh tarragon on top. 2152 N.
