The 1132 and the New Style can both be fixed to feature Two's exclusive new bourbon collaboration with Angel’s Envy.
Chef Tom Van Lente of West Town’s Two Restaurant debuted a libation collaboration with Angel’s Envy bourbon this month. The result is a smooth and smoky liquor available exclusively at Two.
Van Lente knew that no ordinary spirit could hold up to his distinct butcher shop-inspired menu. Working with distillers at Angel’s Envy—and taste-testing lots and lots of bourbon varieties—Van Lente developed a blend of bourbon that hits just the right notes. “The blending of Angel’s Envy was quite a learning experience,” Van Lente says. “We strived to get the best balance possible in terms of sweet, smoky, [and] hot. I think we nailed it.”
With a hint of caramel, Van Lente’s resulting creation goes down smooth when taken neat, but if you prefer a cocktail, the 1132 is a must try. The drink is made with bourbon, Cherry Herring, rhubarb bitters, and brandied cherries. Of course, the exclusive bourbon can be used in any of Two’s existing cocktails upon request; trying it in the New Style, with its blend of Bonal and orange and Angostura bitters, is highly suggested.
“The fact that I can pair it with so many different foods is what makes our blend truly original, bold, and incomparable to others,” Van Lente says, adding that he especially likes to enjoy it alongside duck, pork, and “all things smoked.” 1132 W. Grand Ave., West Town, 312-624-8363
