Dining for Vegans: One Part Plant

Best known around Chicago for her chic stationery brand, Suitor, Jessica Murnane’s latest venture, One Part Plant, is a blog and restaurant partnership campaign to encourage plant-based diets. The story behind One Part Plant starts with Murnane’s own journey as a vegan. The Chicagoan switched to a plant-based diet a few years ago as a last-ditch effort to overcome a health issue that otherwise called for surgery—and it worked. Now, with a Plant-Based Nutrition certification from the T. Colin Campbell Foundation, Murnane is partnering with some of the city’s best restaurants to get green options on their menus.
One Part Plant has eight definitive partners to date—although the dishes at these restaurants change seasonally (or even more often), the chefs at Murnane’s partner restaurants have committed to having at least one menu item that fits One Part Plant’s criteria at all times. Chefs Michael and Patrick Sheerin at participating resto Trenchermen (2039 W. North Ave., 773-661-1540) created a crudite for their current dinner menu. The dish features smoked avocado-pistachio hummus, radish, chestnut, carrot, and baby lettuces.
Meanwhile, at Floriole (1220 W. Webster Ave., 773-883-1313), a red cabbage winter slaw is among the current specials, with dried cranberries, apples, sunflower seeds, and shallots in an oil and vinegar dressing. Another salad the café has featured contains a vegan treasure trove of kale, rye berries, pine nuts, and golden raisins.
And The Bristol’s (2152 N. Damen Ave., 773-862-5555) granola with beets and white miso isn’t on the most current menu, but we’ve got our fingers crossed it comes back soon. Other partners include David Burke’s Primehouse (616 N. Rush St., 312-660-6000), Nightwood (2119 S. Halsted St., 312-526-3385), RM Champagne Salon (116 N. Green St., 312-243-1199), Lula Café (2537 N. Kedzie Blvd., 773-489-9554), and Sable (505 N. State St., 312-755-9704).
