The Publican Perfects Brunch

As if The Publican stretching across Fulton Market to open Publican Quality Meats, a casual dining spot that also acts as a full-service butcher shop, wasn’t enough, the original location is now serving up brunch. Hours at The Publican will remain the same (brunch is served from 10 AM–2 PM on both Saturdays and Sundays), but Chef Paul Kahan, alongside chef de cuisine Brian Huston, has compiled a morning menu to lure in the brunch crowd with the sweet smell of maple syrup-braised Publican bacon.
Saturday offers a selection of Publican-staple oysters, and both days boast lighter takes on lunch plates like weiswurst (Bennison’s pretzel and Bavarian mustard), and sirloin steak (this version is topped with fried egg and served with sweet potatoes, ramps, and cumin yogurt). If it’s breakfast you’re after, bite into Saturday’s turkey schnitzel and waffle with apricot mostarda, or have the Fulton Market quad, which features Toulouse sausage, ndjua, headcheese, and two sunny side-up eggs, come Sunday.
Early-morning imbibing options like a Belgian beer-infused Publican "Mimosa" and the Gin & Treuse, crafted with Scottish Hendrick’s gin, green chartreuse, cucumber, lime, and Fentiman’s tonic, also abound.
